Recipe EXPOSED: The Famous Homemade Granola Bars!

If you’re new here, or have only known me the past few years… let me tell you a little story.

Growing up my parents owned a restaurant called ‘CJ’s Java Joint’ in our little town called Outlook, and they had these amaaaazing granola bars. Freshly made everyday! Lucky for me and my teammates, my mom tweaked that recipe just a bit and made them even better! She would make them for us every single game day, and sometimes she  would even make a batch for the boy’s team because they were jealous we got them! Even when I went to college she still made a big batch for our team on game days, and again, sometimes for the guys too. These things were the BOMB (and still are)!

I’ve been baking these ever since 2012 or so, and have tweaked the recipe a bit, and added in a few new seeds. BUT I’ll always, always, always, give ALL the props to my Momma. She is the OG baker of the famous granola bars, and always will be. 😉

I hope you guys enjoy them just as much my family, my husband, my kids, and old fellow teammates do too!

Ingredients:

• 1 cup coconut oil

• 1 cup brown sugar

• 1/3 cup corn syrup

• 1 1/2 teaspoon vanilla

• 1/2 cup peanut butter

Bring the above ingredients to a boil for ONE minute.

Pour over the following dry ingredients:

• 3 1/2 cups whole oats

• 1/2 cup sesame seeds

• 1/2 cup unsweetened shredded coconut

• 1/2 cup sliced almonds

• 1/2 cup raw pumpkin seeds

• 3 tablespoons ground flax-seed

• 1 tablespoon chia seeds

• 2 teaspoons baking powder

Baking Instructions:

Mix together and pour onto a 10 x 15 cookie sheet lined with parchment paper.

Spread the mixture out on the pan and sprinkle chocolate chips on top.

Bake in a 375° in the oven for 10 – 12 minutes (depending on your oven).

Let it cool for a while. Then cut. I like to cut them 2 x 12.
